This region gives birth to arguably the most influential cuisine in the whole of Italy. Famous for 'The Bolognese' as it is known, originating of course from the capital Bologna, to Parmigiano cheese found in recipes from north to south and exports and imitations of this sprinkling cheese found all over the world. Its sister cheese Grana Padano is also the most popular cheese for topping off a pasta. Emilia Romagna is also known for it’s cured meats (insaccati) especially prosciutto crudo from Parma, culatello, mortadella, cotechino and sandwiching any of these between some flat grilled dough in a piadina.
